Position Summary

As a R&D Flavour Specialist, you will drive development & implementation of state-of-art taste analytics to enable molecular understanding of consumer preference drivers for coffee products. You will build-up and share strong product & process related flavour/non-volatile expertise to accelerate development of innovative products/processes for coffee & beverage bussiness in response to consumer needs.
In this position, you will leverage flavour expertise across product categories, promote collaboration with internal and external partners and assure proper knowledge management.

A day in the life of a R&D Flavour Specialist

  • Optimize existing and develop new methods for non-volatile/taste characterisation (LC-MS, LC-MS/MS)
  • Master/implement state-of-art analytical methods
  • Enable discovery of new markers/drivers through untargeted approaches (Chemometrics)
  • Scout scientific literature/patents for latest trends and propose new ideas to businesses
  • Propose and drive competence building projects and flavour related project activities to accelerate product development
  • Develop deep expertise in flavour chemistry including Maillard reaction
  • Understand reaction pathways and kinetics of flavour formation
  • Study impact of recipe and process parameters on taste/non-volatile profile of semi-finished/finished product
  • Present results in written and oral form to business partners/stakeholders
  • Insource knowledge through networking with external partners (universities, flavour houses etc.)
    • Scout for new collaborators
    • Test new concepts
  • Promote R&D through active participation to scientific symposia and publications in peer reviewed journals
What will make you successful

  • PhD in Food chemistry, flavour chemistry, biochemistry, or other food-related field
  • At least 3-5 years of R&D or academic experience
  • Knowledge of chromatographic techniques including untargeted “omics” methods (mainly LC/MS; LC-MS/MS)
  • Knowledge of coffee flavour including formation pathways & molecular understanding also of statistics
  • Good communication and presentation skills,
  • Fluent in English, another language is a plus
