Position: Executive Pastry Chef (Full time #534852)
Property / Office: Mandarin Oriental Savoy, Zurich
Location: Zurich, Switzerland

Mandarin Oriental Savoy, Zurich is located in the heart of the old town, within the main business centre, close to the city’s leisure attractions and a short walk from the shores of Lake Zurich. Set to open end of 2023, Mandarin Oriental Savoy, Zurich will feature 80 guestrooms and suites and three dining outlets, comprising an all-day dining venue, a speciality restaurant, and a lobby lounge. The property is ideally placed for meetings and gatherings, and the renovation will enhance conference and event facilities, including a grand historic ballroom.

The Executive Pastry Chef will assume all related operational, administrative, and financial aspects for the culinary operation of the Pastry production at all F&B outlets including rooms amenities for Mandarin Oriental Savoy, Zurich.

The Executive Pastry Chef will support the Executive Chef in all administrative tasks including maintenance of quality standards whilst providing operational “hands-on” approach and always maintaining guest satisfaction levels to the standard of the hotel and of the group.

Colleagues’ wellbeing and their personal and professional development will always be part of the Executive Pastry Chef agenda including training, reviews, and interviews of colleagues.

TheExecutive Pastry Chefwill be responsible for the following:

  • Takes the full responsibility of the quality and consistency of all pastry products produced and served
  • Works directly with the Executive Chef on the creation, development and implementation of new desserts and creative menu developments of the restaurants
  • Fosters positive thinking and motivation within all kitchens by giving active assistance and advice on more effective ways of running the kitchens
  • Plan activities, special events and menu implementations according to the annual marketing plans
  • Ensure that all designated action points from daily briefings or bi-monthly operational meetings are being followed by the individuals concerned
  • Ensure that positive working relations with non-food and beverage departments are fostered giving co-operation at all times
  • Be aware of and comply with all legislation affecting the operation health regulations and fire and safety regulations
  • Be responsible and accountable for individual food cost as well as kitchen supplies, energy costs and kitchen utensils
  • Find ways to improve the efficiency of the operations which will benefit our customers
  • Effectively lead the Pastry team ensuring the rosters, timesheets, appraisals etc are all completed to the standard and on time.

Preferred Qualifications and Skills

  • Culinary Degree or Diploma from an accredited culinary institution
  • 3 years experience in managing a pastry/bakery service
  • Work experience with a 5 star international hotel or award winning restaurant
  • Strong knowledge of HACCP
  • Modern and adaptable approach towards emerging worldwide food and beverage trends
  • Flexible and able to adapt to changing environments and management demands
  • Hands-on with an eye for detail
  • Strong leadership skills
  • Creativity & Innovation
  • Fluent in English. Additional German language is preferable
  • The successful candidate must already be eligible to work in Switzerland
